Fishing, baking & more of the same

Stephanie went fishing out back tonight and caught her FIRST FISH EVER!!! She is excited to have caught a fish. Rad thinks it looks like a Perch but it isn't yellow enough. Then he thought maybe a carp. He said he will look it up.Stephanie checked out a cook book from the media center at school last week. She happened to be there yesterday when I was helping out with school pictures. I was joking when I commented that she was returning the book and we hadn't made anything from it. She renewed the book. I told her she didn't have to but she wanted to. We made the mini muffins last night and tonight we made club sandwiches for dinner. She wants to make one thing from each section.

Mini Muffins

2-1/4C flour
1T baking powder
1/2t salt
2/3C sugar
1 egg
2 bananas, roughly chopped
1C milk
3 oz. butter, melted
1-1/3C blueberries

1. Preheat oven to 400 F. Line mini muffin pan with liners.
2. In a large bowl, sift together flour, baking powder, and salt. Stir in the sugar.
3. In a small bowl, mash the bananas with a fork.
4. In a measure cup, whisk together the egg, milk, and butter, then add to the mashed banana, stirring to combine.
5. Add all the wet ingredients to the dry. Stir to just combine, then fold in the blueberries.
6. Spoon into muffin cups and bake for 10 to 12 minutes or until lightly browned. Refill the muffin pan with the paper liners and repeat with the remaining mixture. Makes 48 mini muffins.

Everything else is going along as usual. Ben is thinking of his birthday. Ben and Becca have a temple trip coming up next week (Becca's first time going). The girls have a friend sleeping over tomorrow night. We are officially 1/8th of the way through the school year. All good things.
